In the Basque Country, gastronomy is revered as a veritable religion and it is in the "sidrerías" (traditional Basque cider houses), some over 300 years old, where the famous "charcoal grilled T-bone steaks" are savoured and at the cry of "txotx" (pronounced "choch") cider is poured directly from its barrel into a glass.
